RHUBARB OR APPLE MUFFINS 
3/4 c. brown sugar
1/3 c. oil
1 egg, beaten
1 tsp. vanilla
1 1/2 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1 c. rhubarb or apple, chopped fine
1/2 c. buttermilk
1/4 c. chopped nuts
1/2 tsp. cinnamon
1/4 c. brown sugar

Blend 3/4 cup brown sugar, oil, egg and vanilla in bowl. Add flour, soda and salt. Add buttermilk, fruit and mix thoroughly. Put in greased muffin tins or use cupcake papers. Combine 1/4 cup brown sugar, cinnamon and nuts and sprinkle over batter in muffin tins. Bake at 325 degrees for 30 minutes.

I made mine with rhubarb, my kids ate them right up and asked for seconds. I added a apple crisp top instead of the one listed because I didn't have any nuts. Very yummy.
