RHUBARB MUFFINS 
Mix together:

1 egg
1 c. sour milk
1 tsp. salt
1 tsp. vanilla
1 tsp. baking soda
2 1/2 c. flour
1 1/2 c. rhubarb, diced
1/2 c. nuts

Put batter in liners or muffin tin. Sprinkle top with either cinnamon and sugar, or 1/2 cup sugar and 1 tablespoon melted butter. Bake at 350 degrees 20 minutes or until batter is done.
