BANANA NUT BREAD | |
1/2 cup (1 stick) salted butter 1 cup organic sugar 1 cup unbleached whole wheat flour 1 cup all-purpose white flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1 teaspoon salt 2 large eggs. beaten 3 bananas, ripe and mashed 1/2 cup buttermilk 1/2 cup chopped walnuts Preheat oven to 350°F. Cream butter and sugar together. Mix and sift flours, baking powder, baking soda and salt. Add to creamed mixture, mix in remaining ingredients and blend well. Pour into a buttered or greased loaf pan, makes 2 loafs. Bake at 350°F for 45 to 55 minutes. Use a toothpick in the center to test batter for doneness. Submitted by: Care Bellamy |
