BANANA NUT BREAD 
1/2 c. (1 stick) butter
1 tsp. vanilla
1 1/3 c. brown sugar
2 eggs, well beaten
2 c. all-purpose flour
1/2 tsp. salt
1 tsp. baking soda
1/4 c. buttermilk or sour milk
1 c. banana pulp
1/2 c. broken walnuts

Cream together butter, vanilla and brown sugar. Add eggs. Combine flour, salt and baking soda and add to batter. Beat in buttermilk or sour milk, banana pulp and walnuts. Pour into loaf pan and bake at 350°F for about 50 minutes.

Note: Sour milk is a substitute for buttermilk and is made by adding 1 tablespoon lemon juice or vinegar to 1 cup milk. Let it stand for 5 minutes to thicken.
