BUTTERMILK-APPLE SPICE BREAD 
4 c. unbleached white flour
2 c. oats
1 c. brown sugar, packed
2 tbsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. allspice
6 lg., firm apples, pared and chopped (4 to 5 c.)
3 eggs, beaten
2 1/4 c. buttermilk
1/4 c. melted butter or oil
2 tsp. vanilla

Preheat oven to 375 degrees. Combine flour, oats, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg and allspice in large bowl. Add apples and toss to coat. Beat eggs in separate bowl and beat in buttermilk, butter and vanilla.

Pour egg mixture into dry ingredients, mixing until just blended. Spoon batter into 2 greased 9x5 inch loaf pans. Bake 1 hour and 10 minutes, or until wooden pick inserted in center of loaves come out clean. Yield: 2 loaves.
