OAT PANCAKES 
1 c. all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. regular oats, uncooked
1 tbsp. sugar
1 egg, beaten
1 c. milk
1/2 c. grated apple
3 tbsp. butter, melted

Combine first 5 ingredients in a bowl; make a well in the center. Combine egg, milk, apple, and butter; add to dry ingredients, stirring just until moistened.

For each pancake, pour about 1/3 cup batter onto a hot, lightly greased griddle. Turn pancakes when tops are covered with bubbles and edges look cooked. Yield: 8 (4 inch) pancakes.
