OAT BRAN MUFFINS 
2 1/4 c. oat bran hot cereal (uncooked)
1/4 c. chopped nuts
2 tsp. baking powder
3/4 c. skim milk
1/2 c. eggbeaters (or 2 eggs beaten)
2 tbsp. vegetable oil
1/3 c. honey
1-2 apples, grated
1 tsp. cinnamon

Mix all ingredients together and bake at 425 degrees for 15-17 minutes.

Tips: These muffins will not raise much while cooking, so muffin tins can be filled almost full.

If you have a food processor, the apples and nuts can be put in together and ground.

Any kind of nuts can be used. If you like the flavor of nuts, increase to 1/2 cup.

Any kind of fresh fruit can be substituted for the apples; bear in mind that if you use a dried fruit, the muffins will be a drier texture.
