OAT-BRAN MUFFINS 
2 c. oat bran
1 1/4 c. flour (white, whole wheat, or mixture)
1/3 c. brown sugar
1 tsp. ground cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
1 c. applesauce, or 1 c. mashed bananas or other pureed fruit
1/3 c. skim milk or more depending on what fruit was added
1/2 c. raisins
3 tbsp. vegetable oil
1 egg white

Heat oven to 400 degrees. Grease bottoms only of 12 medium muffin cups. Mix bran, flour, brown sugar, cinnamon, baking powder, baking soda in large bowl. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups (about a heaping 1/4 cup each). Bake until golden brown. 18-22 minutes. Yields 12 muffins
