ORANGE SPONGE CAKE 
4 eggs
1 cup granulated sugar
3/4 cup flour
2 tablespoons orange juice
1/2 teaspoon orange extract or a few drops of pure orange oil
grated rind of 1 orange (zest)

Preheat oven to 350°F.

Beat the eggs with a rotary beater until they are light and lemon colored. Add the granulated sugar gradually. Sift into this the flour, and continue beating until all are mixed. Add the orange juice and extract, pour into a sponge cake pan and bake until a wooden pick inserted in center of cake comes out clean (about 20-30 minutes depending upon your oven).
