POTATO - KRAUT CASSEROLE 
6 slices bacon
4 c. cooked diced potatoes
2 1/2 c. undrained sauerkraut
1 c. chopped celery
1 c. chopped onion
1 tsp. celery seed
3 tbsp. sugar
1/2 c. vinegar
2 tbsp. water
Salt and pepper to taste

Cut up bacon. Fry until crisp. Mix sugar, vinegar, and water. Boil about 3 minutes. Add celery, onions, and celery seed. Cook until transparent. Add sauerkraut, salt, and pepper; stir together. Put diced potatoes in greased 8x12 casserole. Pour kraut mixture over potatoes. Bake in 350 degree oven approximately 30 minutes.
