CREAMY POTATO PUFF 
8 oz. Philadelphia cream cheese
4 c. hot mashed potatoes
1 egg, beaten
1/2 c. finely chopped onion
1 tsp. salt (or to taste)
Dash of pepper (or to taste)

Combine softened cream cheese and potatoes, mix until well blended. Add remaining ingredients. Put in a 1 to 1 1/2 quart casserole. Bake uncovered at 350 degrees for 45 minutes. Serves 6-8.
