PUDDLE CAKE 
1 1/2 c. flour (unsifted)
1 c. sugar
1/4 c. pus 1 tbsp. cocoa
1 tsp. salt
1 tsp. baking soda
1/4 c. plus 2 tbsp. oil
2 tbsp. vinegar
1 tsp. vanilla
1 c. water

Preheat oven to 375 degrees.

Stir together the flour, sugar, cocoa, salt and baking soda in a large bowl.

In a small bowl combine oil, vinegar and vanilla; pour over dry ingredients. Pour water over the top and stir until completely blended.

Pour batter into an 8x8x2 inch cake pan (ungreased). Bake 25-30 minutes or until cake springs back when touched. Frost if desired.
