CREAM PUFF PASTRY 
1 c. water
1/2 c. butter
1 tbsp. sugar
1/2 tsp. salt
1 c. flour
4 eggs

Bring water, butter, sugar and salt to a boil. Add flour and beat vigorously until mixture leaves the sides of the pan and forms a smooth ball. Remove from heat. Quickly beat in eggs, one at a time, beating until smooth after each. Continue beating until mixture is thick and smooth. Dough may be shaped and baked at once, or wrapped in waxed paper and stored in refrigerator overnight.

For small puffs, bake at 450 degrees for 10 minutes. Reduce heat to 350 degrees for 10 minutes or until golden brown. For large puffs, bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees for 25 minutes or until golden brown.
