CREAM COCONUT PIE 
2/3 c. sugar
5 tbsp. flour
2 c. sweet milk
2 egg yolks
1 tbsp. butter
1 tsp. vanilla
2/3 c. coconut
1 pie shell

MERINGUE:

2 egg whites
1/8 tsp. cream of tartar & salt
4 tbsp. sugar
1/2 tsp. vanilla

Combine sugar and flour. Add milk; bring to boil, gradually add small amount of hot mixture to egg yolks. Add to the rest of mixture. Cook 2 minutes. Take off heat. Add butter, flavoring and coconut. Pour into cooking pie shell. Top with meringue.

Meringue: Beat egg whites until light. Add cream of tartar and salt. Continue to beat. Add sugar, one at a time. Beat until peaks form and add vanilla. Bake at 325 degrees until brown. Top with coconut.
