HAWAIIAN MUFFINS 
2 c. flour
1/3 c. sugar
2 tsp. baking powder
1/2 tsp. salt
2/3 c. flaked coconut
1/2 c. chopped dried pineapple
1 jar macadamia nuts, chopped

Stir together dry ingredients. Make a well and add: 3/4 cup milk mixed with 1/2 cup butter, melted and cooled, 1 egg, lightly beaten and 1 teaspoon vanilla. Place macadamia nut in center of each muffin before baking. Bake for 15 to 20 minutes at 400 degrees. These muffins freeze well.
