TURKEY MEATLOAF 
1 (10 oz.) pkg. frozen chopped spinach
1 c. coarsely chopped mushrooms
1/4 c. chopped onion
1/2 c. shredded Swiss cheese
1/4 c. grated Parmesan cheese
1 lb. ground turkey
3/4 c. Quaker oats (quick or old fashioned, uncooked)
1/2 c. skim milk
1 egg white, slightly beaten
1 tsp. Italian seasoning
1/2 tsp. salt
1/4 tsp. pepper

Thaw and drain spinach. Cook spinach, mushrooms and onion over low heat 4-5 minutes or until onion is tender. Remove from heat. Stir in 1/4 cup of Swiss cheese and the Parmesan cheese.

Combine remaining ingredients (except remaining 1/4 cup Swiss cheese) in separate bowl. Spoon 2/3 of meat mixture down center of 11x7 glass baking dish. Make deep indentation down center of meat. Fill with spinach mixture. Top with remaining mixture to encase the spinach.

Bake 30-35 minutes at 375 degrees. Sprinkle remaining Swiss cheese on top. Return to oven 1 or 2 minutes until cheese is melted. Let stand 5 minutes before slicing. Serves 6.
