BEEF ROLLS WITH DRESSING 
1 1/2 to 2 lb. round steak
1 onion, finely chopped
4 tbsp. butter
1 egg, beaten
1 c. bread crumbs
1 tbsp. parsley, minced
1 c. hot water or stock
Salt and pepper

Pound meat into thin pieces about 4 by 3 inches. Season with salt and pepper. Saute onion in butter until transparent. Add bread crumbs, parsley, egg, salt and pepper. Mix well; spread on meat slices and roll securely. Tie with string or pin with toothpicks. Roll in flour and brown in butter. Add hot water or stock and simmer about 1 1/2 hours. Remove string or toothpicks. Pour gravy over meat. Garnish with parsley and serve with mashed potatoes.
