CABBAGE AU GRATIN | |
1 med. head green cabbage, cut in 8 wedges 1/4 c. butter 1 sm. onion, chopped (1/2 c.) 1/4 c. flour 1 1/2 c. milk 1 1/2 c. shredded Cheddar cheese 1 c. fresh whole wheat bread crumbs 1/2 c. chopped walnuts (optional) In large pot in one inch boiling water, steam cabbage 8 minutes. Drain. Arrange cabbage wedges in a shallow baking dish. In medium saucepot, melt butter; saute onion until tender. Stir in flour; cook 1 minute. Remove from heat. Gradually add milk, stirring constantly. Return to heat and stir until mixture boils and thickens. Add cheese; stir until melted. Spoon over cabbage. Combine bread crumbs and nuts. Sprinkle over top. Bake at 350 degrees for 25 minutes until sauce is bubbly and crumbs are toasted. |
