CARROT CAKE 
4 eggs
2 c. sugar
1 1/2 c. salad oil
2 c. self rising flour
1 tsp. cinnamon
1 tsp. vanilla
3-4 drops black walnut flavoring
1 c. shredded carrots
1 c. black walnuts

Mix sugar and salad oil, then add rest of ingredients. Bake in tube pan 1 hour and 20 minutes at 350 degrees.

GLAZE ICING:

1 c. sugar
1/2 c. buttermilk
1 tsp. Karo syrup
1/2 tsp. baking soda

Bring to a boil (will be quite foamy). Spoon over cake while hot. Let cake cool, turn out on plate and sprinkle with confectioners sugar.
