PECAN MUFFINS 
2 c. white flour
3 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar
1 egg, slightly beaten
1 c. milk
1/4 c. melted butter
1/2 c. pecans, chopped

Preheat oven to 375 degrees. Butter muffin pans. Mix 4 dry ingredients together in a large bowl. Add egg, milk and butter, stirring only until flour is dampened. The batter will not be smooth. Add pecans. Fill muffin pans 2/3 full. Sprinkle tops with cinnamon sugar and a few more chopped pecans. Bake about 20 to 25 minutes.
