LEMON MERINGUE PIE 
5 tbsp. cornstarch
2 c. water
1 c. sugar
1/4 tsp. salt
3 beaten egg yolks
5 tbsp. lemon juice
2 tbsp. butter
1 tsp. lemon extract or 2 tsp. grated lemon rind
1 (9-inch) pie shell, baked

Cook sugar, water, salt and cornstarch until thick. Add beaten egg yolks to small amount of hot mixture. Then combine. Add lemon juice, extract or rind and butter. Cook 1 minute longer.

MERINGUE:

3 egg whites, beaten
6 tbsp. sugar
Pinch of salt

Beat until fluffy. Spread on top of pie. Brown under broiler.
