CHEESE VEGGI SOUP 
4 c. chicken broth
1 c. diced onion
1 c. diced celery
2 1/2 c. diced potatoes
1 lb. Velveeta cheese
1 lb. bag frozen mixed vegetables or your favorite
2 cans cream of chicken soup
2 c. diced chicken (optional)

Mix first 3 ingredients in Dutch oven. Cook 20 minutes. Add potatoes and vegetables. Cook 30 minutes more. Add chicken soup. Add cheese. Stir, heat through and serve.
