H.'S SHRIMP AU GRATIN 
4-5 oz. cooked shrimp
3 tbsp. butter
3 tbsp. flour
1 c. hot milk
1/2 c. beef stock
1/2 tsp. salt
1/4 tsp. white pepper
1/4 tsp. season all
Few drops yellow food coloring
1-2 oz. sherry wine

Melt butter. Stir flour smoothly into it. Stir in hot milk and stock. Cook until well blended. Then add salt and pepper, season all, and food coloring. Cook until smooth; then strain through sieve and add wine.

CRUMB MIX:

1 c. bread crumbs
1/2 c. grated Parmesan cheese
1 tsp. paprika

Blend all 3 ingredients together. Place shrimp in single serving casserole dish or pan. Add sauce and cover with crumb mix. Serves 1.
