SHRIMP & CRAB AU GRATIN 
1/2 c. minced onion
1 stalk celery
1/2 c. butter
2 tbsp. flour
1 (13 oz.) can evaporated milk
2 egg yolks, beaten
1 tsp. salt
1/2 tsp. pepper
2 tbsp. chives
1 lb. crabmeat
1 lb. shrimp
1/2 lb. grated cheddar cheese
3 tbsp. sherry (opt.)

Saute onion and celery in butter, then blend in flour. Combine milk and egg and gradually add to flour mixture, stirring constantly. Add seasonings and sherry. Combine shrimp and crab in bowl then pour sauce over it mixing well. Then place in a greased baking dish. Sprinkle with cheddar cheese, then bread crumbs. Bake at 375 degrees for 15 minutes.
