CRAB AU GRATIN 
1 lb. crabmeat
2 tbsp. butter
1 tbsp. cornstarch
1 c. half and half
1 egg yolk
1/4 c. Parmesan cheese, grated
1/4 c. Swiss cheese, grated
Paprika
Salt to taste

Saute crab in butter for 3 minutes. Mix cornstarch, half and half, egg yolk and salt. Stir into crab until thickened. Mix in cheese and pour into buttered 2 quart baking dish. Heat at 350 degrees for 20 minutes. You may serve on avocado, toast, onion pastry cups. Sprinkle paprika on top.
