CRAB MEAT AU GRATIN 
1 lg. onion, chopped
1 1/2 ribs celery, chopped
1/2 lb. butter
4 tbsp. flour
1 lg. can evaporated milk
1 sm. can evaporated milk
2 egg yolks
2 lbs. fresh crab meat
Salt and pepper to taste
Grated cheese

Pour butter in skillet and saute onions and celery until soft and clear. Add flour and blend with the butter, then blend in the milk. Cook until thick. Remove from heat; add egg yolks, crab meat, salt and pepper and grated cheese. Transfer to buttered casserole and top with grated cheese. Bake at 350 degrees for 15-20 minutes or until cheese is melted.
