LIME PEAR MOLD | |
1 lg. (about 3 1/2 c.) can pear halves, reserve juice 1 sm. box lime Jello 1/2 c. water 1 packet unflavored gelatin 2 (3 oz.) pkgs. cream cheese, softened 1/2 pt. heavy whipping cream 1 pt. strawberries or blueberries for garnish Sprinkle lime Jello into a mixing bowl, set aside. Heat pear juice, approximately 1 1/2 cups, to which 1/2 cup water has been added to equal 2 cups liquid, and pour over Jello. Add unflavored gelatin and blend well. Crumble cream cheese and add to Jello mixture. Mix with beater until well blended. Allow to cool for 20 minutes. Meanwhile, puree pear halves in food processor, straining excess juice. Add to Jello. Whip heavy cream and fold into Jello. Rinse a 5 to 6 cup mold in cold water and pour in gelatin mixture. Refrigerate 3 to 4 hours or overnight. Garnish with strawberries or blueberries or both. Yield: 8 to 10 servings. |
