ORANGE CRUNCH COOKIES 
1 c. sugar
1 c. shortening
2 eggs
1/4 c. orange juice
2 tsp. grated orange rind
1 tsp. vanilla
2 c. sifted flour (or 1 3/4 c. whole wheat flour)
1/2 tsp. salt
1 tsp. baking soda
2 c. quick cooking oats
1 c. raisins
1/2 c. chopped nuts

Cream shortening and sugar until light. Beat in eggs, juice, vanilla and rind. Add sifted ingredients and mix well. Stir in by hand, oats, raisins and nuts. Drop by teaspoon on greased cookie sheet. Bake at 375 degrees for 10-15 minutes.
