ARMADILLO EGGS | |
1 lb. ground pork 1 fresh jalapeno, sliced crosswise (need 5 slices) 5 (1/2-inch) cubes Pepperjack cheese 5 thin slices bacon 2 tbsp. garlic pepper seasoning 1 tbsp. crushed red pepper Combine ground pork, crushed red pepper, garlic pepper seasoning (I use my hands to mix with rubber gloves). Divide mixture into 5 even size balls. Using your thumb push jalapeno slice and cheese into center of sausage balls, form balls to seal in pepper and cheese. Take 1 slice of bacon and wrap around each ball. Note: I sprinkle mine with chipotle powder to give it extra kick! These can be baked, fried, or grilled. Bake at 350°F for about 30 to 35 minutes. Grill over medium high heat for 20 to 30 minutes. Great with blue cheese dressing for dipping. Makes 5 eggs. Submitted by: D. Allen |
