ARMADILLO EGGS 
1 lb. ground beef
1 lb. bulk pork sausage (mild or spicy)
1 (8 oz.) pkg. cream cheese, softened
1/4 cup shredded Colby or cheddar cheese
2 or 3 drops yellow food coloring
20 medium jalapeno peppers (about)

Pull stems off jalapenos. Slice down one side end to end and wash out seeds and dry on paper towel.

Mix cream cheese, Colby and food coloring and stuff into peppers and close them.

Mix ground beef and sausage together making patties to cover the whole peppers, sealing in cheese.

Bake, pan fry, or grill to cook raw meat.

Makes 20.
