THE REAL TEXAS ARMADILLO EGGS 
These are always a hit because the flavors blend so well together!

8-10 jalapeno peppers
1 (8 oz.) pkg. cream cheese
1 (1 lb.) pkg. bacon
toothpicks

Line sheet pan with foil for easier clean up. Grease your hands with either oil or butter to keep the oil from the peppers from staying on your hands. Gloves work too.

Cut jalapenos in half, long ways. Clean out seeds and membranes (unless you want to guarantee they are very hot!).

Fill jalapeno halves with cream cheese. Wrap each half with bacon and secure with toothpick.

Broil for about 15-20 minutes, until bacon is cooked. These are great grilled too!

Makes 16-20 Armadillo eggs.
