SUMMER TUNA CAKES | |
1 med. zucchini 1 (6 1/2 or 7 oz.) can tuna, drained and flaked 1 1/2 c. white bread cubes (3 slices) 1 egg 2 tsp. grated onion 1 tsp. lemon juice 1/4 tsp. salt 1/4 tsp. pepper 2 tbsp. salad oil 2 whole wheat slices bread, About 3 tbsp. mayonnaise 2 lg. lettuce leaves 1 sm. tomato, sliced Finely shred zucchini. Pat dry with paper towels. In medium bowl mix zucchini with 7 ingredients. With hands, shape the zucchini mixture into two 3 inch round patties. In 10 inch skillet over medium heat in hot salad oil, cook patties until browned on both sides, about 8 to 10 minutes. Toast whole wheat slices for each serving on plate. Cut each whole wheat toast slice diagonally in half. Spread some mayonnaise, top with a lettuce leaf, half of tomato slices and a tuna patty.
