HILLBILLY BEANS | |
1 pound dried beans 1 large onion, chopped 1 green pepper, chopped 2 tbsp. oil 1/4 pound bacon, diced, then browned & drained 2 tsp. salt 2 tbsp. brown sugar 1 tbsp. mustard 1 (16 oz) can diced tomatoes dash of "chili sauce" (opt) 1/2 tsp. pepper sauce (more if desired) 2 tsp. Worcestershire sauce Pick beans, soak overnight. Place in large saucepan and cover with water. Bring to a boil on high - then reduce heat and simmer approximately 1 hour or until tender. Sauté onion and green pepper in oil for about 5 minutes, then add to beans. Add bacon, salt, brown sugar, mustard, tomatoes, chili sauce, hot pepper sauce and Worcestershire sauce. Simmer for an additional hour, adding water as needed during cooking - if necessary. It is hard to believe the taste that can be reached by adding these ingredients to a simple bag of beans.
