1 1/2 c. sugar
1 c. oil
3 eggs
2 tsp. vanilla
1/2 tsp. salt
2 c. all purpose flour
1 tsp. baking soda
1 1/2 tsp. ground cinnamon
4 lg. Baldwin, Rome or Granny Smith apples, peeled & thinly sliced
1/2 c. coarsely chopped walnuts
Whipped cream (opt.)

In mixer bowl, beat sugar, oil, eggs, vanilla until smooth. Sift together flour, soda and cinnamon; beat into sugar mixture until smooth. Stir in apples and nuts. Spread in greased 13"x9" baking pan. Bake in 350 degree oven for 50 to 60 minutes or until cake tester inserted in center comes out clean. Cool on rack in pan, cut into squares. Serve warm or at room temperature with whipped cream, if desired.
