CABBAGE CREOLE 
2 tbsp. butter
1/2 c. chopped green onion
1 c. chopped bell pepper
1 c. thinly chopped celery
2 c. diced tomatoes, fresh or canned
1 qt. shredded cabbage
1 1/2 tsp. salt
1/2 tsp. pepper

Melt butter in skillet, add all ingredients and mix well. Cover and cook until vegetables are tender (about 10-15 minutes), stirring occasionally. Serves 8.
