ZUCCHINI PIE 
2 deep dish frozen pie shells
1 1/2 lb. ground beef, browned & drained of grease
4 thin sliced zucchini squash
2 thin slices onions
4 thin sliced tomatoes
2 thin sliced bell peppers, optional
1 1/2-2 lb. Cheddar cheese

Preheat oven to 350 degrees. Put frozen pie shells in for 5 minutes. To start them cooking. Remove and fill by layering ingredients. Start with cheese, then beef, squash, onion, tomatoes, peppers and cheese. Repeat this again. Be sure to push ingredients down well into pie shells and top with cheese. Bake for 30-45 minutes. Let set for 15 minutes before serving.
