BROCCOLI CASSEROLE 
1 (2 lb.) pkg. frozen broccoli
1 (8 oz.) pkg. cream cheese
2 (10 oz.) cans cream of mushroom soup
4 tbsp. butter, divided
1 sm. onion, optional
1 c. Ritz crackers, crushed

Cook broccoli according to package directions. Meanwhile, saute onion in 1 tablespoon of butter. Put broccoli into 9 x 13 or similar size casserole. Spread onions on top.

In same fry pan as used for onions, combine cream of mushroom soup and cream cheese, and cook over low heat, stirring often until blended. Pour over broccoli mixture.

Wash pan, and melt rest of butter. Stir in crushed Ritz crackers and mix until coated. Spread on top of casserole and bake at 375 degrees for 30 minutes until sauce is bubbly. Yield 8 servings.
