PUMPKIN BREAD 
2 c. (16 oz.) canned pumpkin
3 c. sugar
1 1/2 tsp. salt
1 tsp. cinnamon
4 tsp. pumpkin pie spice
1/2 tsp. nutmeg
4 eggs, slightly beaten
3 1/3 c. flour
1 tsp. baking powder
2 tsp. baking soda
1 c. water
1 c. vegetable oil
1 c. nut meats, chopped (optional)

Combine first 6 ingredients and stir until well mixed. Add eggs, stir. Combine flour, soda and baking powder and add alternately with oil and water. Add nut meats. Pour into 3 greased loaf pans. Bake at 350 degrees about 1 hour (toothpick test). Cool in pans 10 minutes. Turn out and continue cooling. When cool wrap in bread bags or plastic storage bags. Freezes extremely well.
