OVERNIGHT MEATLOAF 
¼ cup sweet relish
2 tablespoons chopped pimiento
2 tablespoons chopped cashews or sunflower seeds
1 cup Craisins (optional)
1 tablespoon deli style mustard
¾ teaspoon salt
¼ teaspoon black pepper
4 cups ground cooked pork or beef
3/4-1 cup melted butter

In a medium size bowl combine first 6 ingredients. Add pork mixed with butter. Mix thoroughly. Shape meat into a loaf (7 by 3 by 1 1/2-inches) and place on foil. Wrap tightly. Refrigerate for 8 hours or overnight.

When ready to use, carefully cut into ¼ to ½-inch thick slices.

Serve cold on buttered toast or crackers.

Makes 1 small meatloaf.
