MEATBALL SAUERKRAUT 
1 lb. ground beef
3 c. soft bread crumbs (3-4 slices bread)
1/4 c. milk
1 egg
2 tbsp. shortening
1 (1 lb. 11 oz.) can sauerkraut, drained
1/2 c. chopped onion
3/4 c. long grain rice
1 1/2 c. water
1 lb. can tomatoes

Combine beef, bread crumbs, milk, egg, 1/2-3/4 teaspoon salt, dash pepper. Mix well; shape into 12 meatballs. Brown in shortening in large skillet. Remove meat balls.

In same skillet combine sauerkraut, onion, and 1/2 teaspoon salt. Stir in rice and water. Add meatballs and tomatoes; bring to boiling. Reduce heat and simmer, covered, for 30-35 minutes. Makes 6 servings.
