GRANDMAS CHEESE CAKE | |
2 (8 oz.) pkgs. cream cheese 1/3 c. glazed cherries 1/2 c. white sugar 1 (12 oz.) tin crushed pineapple, drained 1/2 tsp. salt 1 tsp. vanilla 1/2 c. butter 2 c. graham wafer crumbs 3 eggs (separated) In blender container place egg yolks, cream cheese, sugar, salt, and vanilla. Blend well and stir in glazed cherries and crushed pineapple. Set aside. Mix graham wafer crumbs with butter. Place 2/3 of this mixture into the bottom of a buttered 8 x 8 inch pan. Beat egg whites until stiff. Fold cream cheese mixture into egg whites. Pour over graham wafer crumbs. Top with remaining 1/3 crumb mixture. Bake at 350 degrees for 40 minutes. Chill and cut into squares. (A larger pan can be used to make a thinner cake). |
