1 lb. ground beef 3 lg. onions 1 lg. green pepper, chopped 1 (1 lb.) can tomatoes 1/2 c. uncooked regular rice 1 to 2 tsp. chili powder 2 tsp. salt 1/8 tsp. pepper Heat oven to 350 degrees. In large skillet, cook and stir ground beef, drain fat. Add onions, green peppers, cook until onion is tender. Stir in tomatoes, rice, chili, salt and pepper; heat through. Pour in ungreased 2-quart casserole, cover. Bake 1 hour. Serve with slaw and cornbread or rolls. 4 to 6 servings. |
