LIME PICKLES | |
Slice cucumber slices 1/4 inch thick. Mix 2 cups household lime and 2 gallons cold water, enough to cover all cucumbers. Soak in lime and water mixture 24 hours. Rinse well several times in clear water and then cover with clear water and let stand 3 hours. Drain. Put following mixture over pickles boiling hot and let stand overnight: 2 qt. vinegar 4 1/2 lb. sugar 1 tsp. celery seed 3 tbsp. salt 1 tsp. whole cloves 1 tsp. minced spices Next morning cook pickles in vinegar mixture 35 minutes. Pack in jars and seal while hot covered with hot liquid. |
