EASY LIME PICKLES | |
7 lb. sliced cucumbers 2 gallons water 2 c. Mrs. Wages pickling lime 1 tsp. celery seed 1 tsp. salt 3 sticks cinnamon SYRUP: 2 qt. vinegar (cider) 1 tsp. cloves (whole) 10 c. sugar 1 tsp. pickling spice Slice cucumbers. Cover with water and lime. Gallon jars are nice. Let set for 24 hours in solution. Drain and wash until all lime is off. (Be sure and shake jars occasionally while soaking.) Make syrup ahead and let cool. Place cucumber in syrup in large pan and cook until clean. Use wooden spoon when stirring. Enamel pan or stainless steel is recommended. Can in hot jars. Seal. |
