CHINESE PEPPER STEAK | |
1 lb. sirloin tip 1/4 c. soy sauce 1 tbsp. water 1 tsp. cooking sherry 1 1/2 tsp. cornstarch 2 cloves garlic, finely chopped 3 tbsp. oil 2 1/2 c. coarsely chopped green pepper 1 med. onion, chopped or thinly sliced 1 tsp. salt 1/2 tsp. pepper 2 lg. tomatoes, cut in wedges or 1 can tomatoes, chopped In a medium bowl, combine soy sauce, water and sherry with cornstarch; blend. Slice meat into thin slices; add to soy sauce mixture; sprinkle with garlic and let stand about 1/2 hour. In a frying pan or wok, heat oil. Add peppers and onions; cook slowly until almost tender, stirring constantly. Add beef, salt and pepper, mix well. Cook until meat is tender, about 10 to 15 minutes. Add tomatoes and stir, cook until tomatoes are tender. Serve over rice. Serves 6. |
