NEW ORLEANS STYLE SAUSAGE RAGOUT | |
1/2 lb. kielbasa or other smoked sausage, cut in 1/2" slices 1 med. green pepper, chopped 1 med. onion, chopped 2 cans stewed tomatoes 1 pkg. frozen cut okra 2 tbsp. chopped parsley 1/2 tsp. dried thyme 1/2 tsp. ground red pepper 1 can pinto beans, drained In large saucepan, cook sausage, green pepper and onion 3-4 minutes or until lightly browned. Drain. Stir in tomatoes, breaking up. Add okra, parsley, thyme, red pepper and 1 cup water. Bring to a boil. Reduce heat, cover and simmer for 10 minutes, stirring. Add beans, heat through. Delicious! |
