ITALIAN CASSEROLE 
2 lbs. ground beef or turkey
2-3 carrots, sliced
1 (16 or 20 oz.) bag frozen broccoli
1 (16 or 20 oz.) bag frozen cauliflower
2 med. onions, diced
1 lg. can mushrooms (drained)
1-2 green peppers (diced)
2 cans French style green beans (drained)
2-3 c. spaghetti sauce
1 c. cooked rice

Brown meat and drain if necessary. Add onions, peppers and mushrooms, cook until half done. Cook carrots, broccoli and cauliflower. Drain and add green beans. Add to meat and onions.

Mix all together with spaghetti sauce. (You can use homemade or bought.) Add rice. Put in large baking dish and bake for 45 minutes to 1 hour at 350 degrees. You can, if desired, top with shredded cheese (Cheddar or Mozzarella).
