JAMAICA SHRIMP AND RICE 
3 oz. salt pork
1 clove garlic
1 tbsp. parsley
1/2 c. onions
1/2 c. celery
2 tomatoes, chopped
1/2 c. dry white wine
1 tsp. Worcestershire sauce
1 lb. shrimp, shelled
1/4 c. tomato catsup
1/4 c. green pepper
1 bay leaf
Pinch of saffron
1/4 tsp. salt
3/4 c. rice
1/4 tsp. pepper
1 1/2 c. water

Chop salt pork, garlic and parsley and combine in a skillet. Chop onions, celery and green pepper and add to skillet with bay leaf, saffron, salt and pepper. Cook for 5 minutes, stirring occasionally. Add the chopped tomatoes, wine, Worcestershire sauce, shrimp, catsup, rice and water and cook approximately 20 minutes longer. Stir often.
