SAVANNAH RED RICE | |
4 strips bacon, crumbled 2 chopped green peppers 2 chopped med. onions 2 c. cooked rice 1 (16 oz.) can stewed tomatoes 1 c. tomato sauce 1 tsp. hot pepper sauce 1 tbsp. Parmesan cheese 1/4 tsp. pepper 1 lb. cooked sausage chunks or shrimp Fry bacon crisp and drain on towel. Brown pepper and onions in drippings; add rice, tomatoes, tomato sauce, pepper, hot pepper sauce, bacon, and sausage chunks or shrimp. Pour into 2-quart greased casserole. Sprinkle top with Parmesan cheese. Bake at 325 degrees for 30 minutes. Makes 4 good servings. |
