NEW ORLEANS RED BEANS AND RICE 
2 to 3 tbsp. oil
1 sm. chopped onion
1 chopped green pepper
1 carrot, thinly sliced
1 stalk celery with leaves, chopped
1 clove garlic
2 c. water or chicken broth
1/2 tsp. salt
1/4 tsp. thyme
1 lb. can of kidney beans, drained and rinsed
1/2 to 1 lb. smoked or hot sausage
1 to 2 strips bacon chopped (optional)
Cajun Spice, Hot Sauce or Cracked Red Pepper to taste

Saute onion, green pepper, carrot, celery and garlic in oil. Stir occasionally and cook only until onion is transparent. Add bacon and sliced sausage. Cook until warmed through. Add spices, chicken broth and drained beans. Cook on low in crock pot for 6 to 8 hours. When ready to serve, cook 1 bag of "Success" rice. Serve beans over rice.
